After several months of tedious household errands to run, the Chirstmas, New Year, Chinese New Year, and visitations to the friends n relatives who r sick........
I think I really need a break oversea to enjoy the fall in Melbourne.... n to see my family there....... So I am now on the way n God have mercy for our journey......n God I prayed all my things n food brought into the OZ country would not be confiscated ...... pray ppprayyy.....

Sometimes you win even when you lose.

I do not retrieved all the mails that come along my inbox but rather pick n choose the more that trigger my likness to stumble upon. No doubt I believed that sharing is the most caring even in e-sharing and today I came an outdated piece thus goes like this:


(an excerpt from the email that my friend sent)

Two Choices

What would you do?....you make the choice. Don't look for a punch line, there isn't one. Read it anyway. My question is: Would you have made the same choice?



At a fund raising dinner for a school that serves children with learning disabilities, the father of one of the students delivered a speech that would never be forgotten by all who attended.

After extolling the school and its Dedicated staff, he offered a question:

'When not interfered with by outside influences, everything nature does, is done with perfection.

Yet my son, Shay, cannot learn things as other children do. He cannot understand things as other children do.

Where is the natural order of things in my son?'



The audience was stilled by the query.



The father continued. 'I believe that when a child like Shay, who was mentally and physically disabled comes into the world, an opportunity to realize true human nature presents itself, and it comes in the way other people treat that child.'

Then he told the following story:



Shay and I had walked past a park where some boys Shay knew were playing baseball. Shay asked, 'Do you think they'll let me play?' I knew that most of the boys would not want someone like Shay on their team, but as a father I also understood that if my son were allowed to play, it would give him a much-needed sense of belonging and some confidence to be accepted by others in spite of his handicaps.



I approached one of the boys on the field and asked (not expecting much) if Shay could play. The boy looked around for guidance and said, 'We're losing by six runs and the game is in the eighth inning. I guess he can be on our team and we'll try to put him in to bat in the ninth inning..'



Shay struggled over to the team's bench and, with a broad smile, put on a team shirt.. I watched with a small tear in my eye and warmth in my heart. The boys saw my joy at my son being accepted.

In the bottom of the eighth inning, Shay's team scored a few runs but was still behind by three.

In the top of the ninth inning, Shay put on a glove and played in the right field. Even though no hits came his way, he was obviously ecstatic just to be in the game and on the field, grinning from ear to ear as I waved to him from the stands.

In the bottom of the ninth inning, Shay's team scored again.

Now, with two outs and the bases loaded, the potential winning run was on base and Shay was scheduled to be next at bat.



At this juncture, do they let Shay bat and give away their chance to win the game?

Surprisingly, Shay was given the bat. Everyone knew that a hit was all but impossible because Shay didn't even know how to hold the bat properly, much less connect with the ball.



However, as Shay stepped up to the

Plate, the pitcher, recognizing that the other team was putting winning aside for this moment in Shay's life, moved in a few steps to lob the ball in softly so Shay could at least make contact.

The first pitch came and Shay swung clumsily and missed.

The pitcher again took a few steps forward to toss the ball softly towards Shay.

As the pitch came in, Shay swung at the ball and hit a slow ground ball right back to the pitcher.



The game would now be over.

The pitcher picked up the soft grounder and could have easily thrown the ball to the first baseman.

Shay would have been out and that would have been the end of the game.



Instead, the pitcher threw the ball right over the first baseman's head, out of reach of all team mates.

Everyone from the stands and both teams started yelling, 'Shay, run to first!

Run to first!'

Never in his life had Shay ever run that far, but he made it to first base.

He scampered down the baseline, wide-eyed and startled.



Everyone yelled, 'Run to second, run to second!'

Catching his breath, Shay awkwardly ran towards second, gleaming and struggling to make it to the base.

By the time Shay rounded towards second base, the right fielder had the ball . The smallest guy on their team who now had his first chance to be the hero for his team.

He could have thrown the ball to the second-baseman for the tag, but he understood the pitcher's intentions so he, too, intentionally threw the ball high and far over the third-baseman's head.

Shay ran toward third base deliriously as the runners ahead of him circled the bases toward home.



All were screaming, 'Shay, Shay, Shay, all the Way Shay'



Shay reached third base because the opposing shortstop ran to help him by turning him in the direction of third base, and shouted, 'Run to third!

Shay, run to third!'



As Shay rounded third, the boys from both teams, and the spectators, were on their feet screaming, 'Shay, run home! Run home!'

Shay ran to home, stepped on the plate, and was cheered as the hero who hit the grand slam and won the game for his team



'That day', said the father softly with tears now rolling down his face, 'the boys from both teams helped bring a piece of true love and humanity into this world'.



Shay didn't make it to another summer. He died that winter, having never forgotten being the hero and making me so happy, and coming home and seeing his Mother tearfully embrace her little hero of the day!


A wise man once said every society is judged by how it treats it's least fortunate amongst them.


I myself always liked the last quote of the whole story. May the society always give chances to the less fortunate amongst them and not just segregate them. Be patience and give them a fair try-out. God makes everyone unique in this world.

Contructing sentences using Arabic numerals

Never underestimate the english of a Chinaman...

Hai hai hai... u might not want to continue reading this but this is hilarously funny when A Malaysian Chinese Ah Pek was asked to construct sentenses using the numeric 1, 2, 3, 4, 5, 6, 7, 8, 9, 10 during an English tuition class. He was so much praised and yet he did the reverse way from 10 - 1. Everyone applaused when he came up with this ........

1 day I went 2 climb a 3 outside a house to peep. But the couple saw me,
so I panicked and 4 down. The man rushed out and wanted to 5 with me. I ran
until I fell 6 and threw up. So I went into 7-eleven and grabbed some 8
to throw at him. Then I took a 9 and tried to stab at him. 10 God he ran
away.

10 I put the 9 back and paid for the 8 and left 7-eleven. Next day I
called my boss and told him I was 6. He said 5 , tomorrow also no need
to come back 4 work. He also asked me to go climb a 3 and jump down! I
don't understand. I am so nice 2 him but I don't know what he 1.

"Chap Gor Mei"

Yesterday it was the last day of cny celebration, for us we just have a family reunion dinner with my in-laws, the nephews, niece and the little kid in the usual restaurant we dinned. After the dinner we joined our neighbors for their open house 'chap Gor Mei" dinner. We were too full for the food but rather we took some wine and drink. It was nice in an open space dinner like this and an opportunity to chat around with all the friends whom we knew. John helped me to take several pictures of the fire work played which dominated its popularity scence among the whole of the housing area here. I only saw my neighbor took out boxes of different varity of firecrackers for his guess to play. The adults played those which would explode high into the sky and the kids played the lighter ones.


Like a flock of birds flying above the sky.


Like a mimosa flower.

Rich Fruit Cake
Ingredient:

250 gm butter
200 gm Sugar
4 eggs
1 sunkist orange juice and its skin
225 gm flour
1/2 tsp baking powder
500 gm mixed fruit ( self mixed cheaper and look nicer)

Method:
1. Can opt to soak the mixed fruit with 4 tlbsp of brandy overnight or do without
it. ( picture showed with the brandy)
2. Cream butter and sugar till light white n fluffy. Do not beat for more than 10
minutes.
Add in egg one by one. Then add in brandy. (optional) Add in sifted dry
ingredient.
3. Finally put all the fruit in and stir. Use a 9" x 9" cake tin and bake for 1 hour
and fifty minutes at 160* C. Cool it and spread brandy on the surface if u opt
for brandy made for 3 days. Only then can serve. This cake goes well with
flavour if keep longer.

Nutty Chocolate Cake
500 gm nestum or with oak
200 gm condensed milk
100 gm sugar
5 eggs
250 gm butter
1 tsp vanila essence
200 gm cheese biscuit
300 gm mixed nuts with dried fruit
350 gm cooking chocolate

Method:
1. Cream butter and sugar. Add in egg one at a time.
2. Add nestum and condensed milk and vanila essence.
3. Cut the cooking chocolate into small cubes and add into the above mixture.
4. Stir the mixture in a kuali over very low heat until not sticky and when the
mixture show sign of oil coming out. Cook for about 20 minutes.
5. Crush the cheese biscuit into smaller pieces.
6. Mix the biscuit, mixed nuts with dried fruits into the cooled mixture.
7. Line a 8" x 8" tin with a greased paper and pour the mixture into the tin.
Press it down with the table spoon and refrigerate before serving. It keeps well in
the fridge for at least 3 weeks.

Those 2 are my self designed cny cake which I used to make every year.

cheesecake seduction


1st time I made this cheese cake and receipe from Celebrity Chefs' Cookbooks by Catherine Lau but I need to modify to suit my making.

Ingredients:

Base: Butter 100 g diced
Digestive biscuits 170 g finely crushed
Brown sugar 30 g
Cocoa powder 30 g sifted
Cornflakes 50 g crushed

Filling
Cream cheese 500 g diced
Castor sugar 140 g
Powdered gelatine 1 1/2 Tbsp dissolved in 80ml water
Thickened cream 600 ml
Colouring pink, yellow, purple and green

Topping
any decorative rice candies

Method:
Base: Melt the butter in a pan over low heat. Stir in all the mixture and mix well. Be aware not to burn it. Press into a greased 23cm spring form or false bottomed cake pan with the back of a metal spoon or with your hand. Cover cake pan and refrigerate for at least 30 minutes.

Filling
. Beat cream cheese and sugar until smooth. Pour in gelatine and mix until
combined. Blend in Cream.
. Divide the filling into four equal portions. Add a different colouring to each
portion.
. Pour one portion of filling on biscuit base. Refrigerate for a few minutes to
set. Repeat with the remaining portions of filling.
. Cover cake pan. Refrigerate for at least 6 hours.

Topping
. Transfer cake to a serving plate and decorate with the colourful rice candies
before serving.


Pandan Coconut Cheese Cake

What u need:

(A) 500 g cream cheese
100 g sugar
(B) 3 eggs yolk
(C) 20 g flour
(D) 200 g coconut milk and 1 teaspoon of Pandan leave juice or the Pandan colouring
(E) 3 egg white
75 g sugar

way to do it:
1. Cream (A) and add (B) and cream until smooth.
2. Add (C) and mix thoroughly.
3. Add (D) into the mixture from step 2.
4. Whip (E) and add into the Cheese mixture from step 3.
5. Bake in water bath at 160*C for 60 - 70 mins.
6. Remove from the oven and let it cool. Let it refrigerate and serve cold.


These are the 2 cheese cake I made for CNY this year. Despite time consuming and expensive for the cheese, I like to make cheese cake.
