"Chap Gor Mei"

Yesterday it was the last day of cny celebration, for us we just have a family reunion dinner with my in-laws, the nephews, niece and the little kid in the usual restaurant we dinned. After the dinner we joined our neighbors for their open house 'chap Gor Mei" dinner. We were too full for the food but rather we took some wine and drink. It was nice in an open space dinner like this and an opportunity to chat around with all the friends whom we knew. John helped me to take several pictures of the fire work played which dominated its popularity scence among the whole of the housing area here. I only saw my neighbor took out boxes of different varity of firecrackers for his guess to play. The adults played those which would explode high into the sky and the kids played the lighter ones.

Rich Fruit Cake
Ingredient:

250 gm butter
200 gm Sugar
4 eggs
1 sunkist orange juice and its skin
225 gm flour
1/2 tsp baking powder
500 gm mixed fruit ( self mixed cheaper and look nicer)

Method:
1. Can opt to soak the mixed fruit with 4 tlbsp of brandy overnight or do without
it. ( picture showed with the brandy)
2. Cream butter and sugar till light white n fluffy. Do not beat for more than 10
minutes.
Add in egg one by one. Then add in brandy. (optional) Add in sifted dry
ingredient.
3. Finally put all the fruit in and stir. Use a 9" x 9" cake tin and bake for 1 hour
and fifty minutes at 160* C. Cool it and spread brandy on the surface if u opt
for brandy made for 3 days. Only then can serve. This cake goes well with
flavour if keep longer.

Nutty Chocolate Cake
500 gm nestum or with oak
200 gm condensed milk
100 gm sugar
5 eggs
250 gm butter
1 tsp vanila essence
200 gm cheese biscuit
300 gm mixed nuts with dried fruit
350 gm cooking chocolate

Method:
1. Cream butter and sugar. Add in egg one at a time.
2. Add nestum and condensed milk and vanila essence.
3. Cut the cooking chocolate into small cubes and add into the above mixture.
4. Stir the mixture in a kuali over very low heat until not sticky and when the
mixture show sign of oil coming out. Cook for about 20 minutes.
5. Crush the cheese biscuit into smaller pieces.
6. Mix the biscuit, mixed nuts with dried fruits into the cooled mixture.
7. Line a 8" x 8" tin with a greased paper and pour the mixture into the tin.
Press it down with the table spoon and refrigerate before serving. It keeps well in
the fridge for at least 3 weeks.

Those 2 are my self designed cny cake which I used to make every year.
